As many Jenna fans know (and love), she is a big fan of food. As such, we’ve decided to make a page dedicated to the various recipes and treats she’s chatted about over the years!

Stuffed Bell Peppers

Serves 4

Ingredients

1 pound ground turkey (93 percent lean)
1/2 cup rice (not instant)
1 teaspoon salt
1 teaspoon pepper

4 green bell peppers (or any combination of red, yellow or green)
1 can tomato soup
1 tablespoon Worcestershire sauce

Preparation

Clean peppers, cut off the tops and dig out the gross stuff inside. Set aside. Combine turkey, rice, salt, pepper and 1/2 cup water. Scoop the mixture into the peppers. Place peppers into a crock pot. Mix soup, Worcestershire and 1/2 cup water. Pour over peppers. Cover and set crock pot to low. Dinner is ready in 6-7 hours.

The Chicken-Pasta Thing

Skip fast food and get a slow cooker

You put a fresh or frozen chicken breast in the Crock-Pot;
Pour in a jar of Trader Joe’s vodka sauce;
Add half a package of frozen peas, chopped onions, and mushrooms;
Cook it on low for seven hours.

Then you take out the chicken, dice it, mix it into the sauce, and serve it over whole-wheat pasta.

Sweet And Sticky Chicken

Ingredients

4 boneless skinless chicken breasts
1 1/2 cups Russian salad dressing
1 1/2 cups apricot preserves 1 (1 ounce) packet dry onion soup mix

Directions:
Preheat oven to 425 degrees F.
Season the chicken with salt & pepper. Place in a foil-lined baking dish.
Mix together salad dressing, apricot preserves, and soup mix. Pour over chicken.
Bake for 25-30 minutes, until internal temperature reaches at least 150 degrees.

88 Calorie Brownies

Ingredients

1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
4 egg whites
1 cup sugar
1/4 cup unbleached, all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon instant espresso powder (note: I couldn’t find this and my brownies came out fine without it)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup mini chocolate chips (semi-sweet)
Butter-flavored cooking spray

Preheat the oven to 350 degrees. Spray an 8×8 inch non-stick cake pan with spray.

In a medium mixing bowl, using a sturdy whisk or spatula, mix the applesauce, vanilla, egg whites and sugar until they are well combined.

Add the flour, cocoa powder, espresso powder, baking powder, and salt. Stir the mixture until it is just combined and no lumps remain. Pour it into the prepared pan. Sprinkle the chips evenly over the top. Bake the brownies for 20-22 minutes or until a toothpick inserted in the center comes out dry (a few crumbs are okay).

Transfer the pan to a cooling rack and allow them to cool 5 minutes. Cut into 12 equal brownies. Makes 12 (1 brownie) servings.

Each brownie has: 88 calories, 2 g protein, 19 g carbohydrates, 1 g fat, less than 1 g saturated fat, 0 mg cholesterol, 1 g fiber, 133 mg sodium

Traditional Double Chocolate Brownies have: 260 calories, 3 g protein, 37 g carbohydrates, 12 g fat, 3 g saturated fat, 15 mg cholesterol, 1 g fiber, 165 mg sodium

The addition of the espresso powder makes these brownies richer and more chocolaty tasting without adding calories. Just be sure you buy instant espresso powder.

Cheesy Beef Burrito

This quick and easy burrito recipe from my Sister

Prep time: 10 min
Total time: 20 min
Makes: 4 servings

What You Need

1/2 lb. extra-lean ground beef
2 tsp. chili powder
1 can (15 oz.) black beans, rinsed
1/2 cup TACO BELLĀ® HOME ORIGINALSĀ® Thick ‘N Chunky Salsa
2/3 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese
4 flour tortillas (10 inch)
1/4 cup BREAKSTONE’S Reduced Fat or KNUDSEN Light Sour Cream
1 tomato, chopped
1 cup shredded romaine lettuce

Make It

Cook meat and chili powder in large skillet on medium-high heat 5 min. or until meat is done, stirring frequently. Add beans and salsa; cook 5 min. or until heated through, stirring occasionally. Remove from heat. Stir in cheese.

Spread meat mixture down centers of tortillas; top with remaining ingredients.

Fold in opposite sides of each tortilla, then roll up burrito-style.
